Food for Thought: Fudgy Banana Chocolate Chip Birthday Muffins

Our guest presenter for this event is Veronica Ramirez, owner of Vero Pure Green, Health Coaching Services. She will be providing nutrition tips and teaching us how to prepare a healthy and delicious recipe. If you'd like to follow along please make sure to have the below ingredients on hand:

2 medium size ripe bananas
• 1 Tbsp flaxseed meal (to make flax eggs)
• 2 1⁄2 Tbsp water (to make flax egg)
• 1 1⁄2 tsp baking soda • 1/2 cup coconut sugar
• 3 Tbsp maple syrup (or agave)
• 1/4 cup of nut or seed butter of choice
• 1/4 tsp pink Himalayan salt
• 1/2 tsp pure vanilla extract
• 2 Tbsp avocado oil (or melted coconut oil)
• 1/2 cup cocoa powder
• 3/4 cup gluten-free rolled oats
• 1 1⁄4 cup oat flour
• 1/4 cup semi sweet or dark chocolate chips
