1/6/21: Food for Thought: Three Bean Salad

Our guest presenter for this event was Veronica Ramirez, owner of Vero Pure Green, Health Coaching Services. She provided nutrition tips and taught us how to prepare a three bean salad. For more on Vero Pure Green:

Salad Ingredients 
• black beans (1 can- Organic) 
• kidney beans (1 can- Organic) 
• cannellini beans (1 can- Organic) You can use any beans you like! 
• ½ cup cherry tomatoes or 1 grape tomato 
• 1 bell pepper • Corn (1 can-Organic) 
• ½ red onion 
• Bunch of fresh cilantro,
• 1 avocado (optional)

For the Dressing:
• 1 lime or lemon
• 1 teaspoon apple cider vinegar
• 1 tablespoon Olive Oil
• Pinch pink Himalayan Salt
• Pinch of Black Pepper
